Guaymallén had 457.3 hectares of vines in 2025, down from 590.5 in 2018 and 771.6 in 2010, as the city has grown around it. In 2018 there were 130 vineyards averaging about 5 hectares. Malbec was 24.7% of the vines, Bonarda 10.1%, Syrah 9.2% and Pedro Giménez 8.2%.

The wineries do far more than the vineyards suggest. In 2018 its 26 producing wineries made 260,507 hectolitres while the department's own vines gave 49,352 quintals of grapes, so most of what's made there comes from fruit grown elsewhere.

I'd start with a sparkling wine, since that's what the department built its name on, and with a Bonarda from old vines.
