Córdoba's wine history goes back a long way. El Cronista dates Jesuit winemaking to 1618 at the Estancia Jesús María, working with about 20,000 vines planted by the first Spanish settlers. The 1936 vine census counted 2,156 hectares and 1,754 vineyards. By 1990 that was 756 hectares and 415 vineyards. In 2025 the INV counted 267.8 hectares in 108 vineyards, an average of 2.5 hectares, which puts Córdoba ninth among the wine provinces.

The vines are young. 78.6% of the area was planted after 2000, and Malbec has grown by 26.6 hectares in ten years while Pinot Noir has lost 37.2. The INV has 42 varieties in the ground. Colón alone produced 78.5% of the 2025 wine, and all the wine Córdoba sold that year went to the home market.

I'd taste a Malbec and an Isabella from the province side by side. They are the two biggest grapes, and together they show how wide the range is.
